Ingredients
4 breakfast sausages
2 frozen hash browns
2 tomatoes, halved
1 large onion, sliced
1 cup mushrooms, sliced
2 cups fresh spinach
4 large eggs
2 tablespoons olive oil or butter

Instructions
1. Cook the Sausages:
Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
Add the sausages and cook until browned and fully cooked, turning occasionally (about 8-10 minutes).
Remove and set aside.
2. Prepare the Hash Browns:
In the same skillet, add another tablespoon of oil or butter.
Spread the hash browns evenly and cook until golden and crispy, about 5-7 minutes. Flip halfway through. Remove and set aside.
3. Cook the Vegetables:
In the same skillet, add onions and mushrooms. Sauté for 5 minutes until softened.
Push to one side of the skillet and add the tomatoes cut-side down. Cook for 3 minutes until slightly caramelized.
Add spinach to the skillet and cook until wilted (about 1-2 minutes).
4. Fry the Eggs:
In a separate smaller pan (or the same skillet if there's room), fry the eggs sunny-side-up or to your preferred doneness.
5. Assemble the Breakfast:
Arrange the hash browns, sausages, and sautéed vegetables on plates. Top with fried eggs and season everything with salt and pepper.
6. Serve:
Serve warm and enjoy a balanced, flavorful farmhouse breakfast!
